Ginger and Orange unite in this delightfully delicious, butter-free, loaf-cake!

Ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 2 tsps baking powder
  • 1/2 cup olive oil
  • 1/2 cup orange juice + 1/2 tsp orange zest
  • 1 tsp freshly grated ginger
  • 4 egg whites

Instructions

  • Preheat oven to 350 degrees.
  • Add flour, sugar, baking powder, and salt to a bowl and mix with a spatula.
  • Then pour in the orange juice, olive oil, orange zest and ginger and mix with the spatula.
  • Then, using a handheld mixer, beat the egg whites till they are stiff. Using the same spatula, fold the egg whites into the orange ginger loaf batter gently and until well incorporated. Pour dough into a parchment lined loaf pan and bake for 1 hour. Your Kitchen will smell heavenly - but resist the urge to open the oven till the hour is up. Let come to room temperature and enjoy as is or with whipped cream and fruit.
