If you have 30 minutes at dinnertime, you can whip up this delicious, budget friendly and nutritious, fish curry. Pair it with some naan and Yuengling, and you have a delightfully delicious meal to end your day with.
- 2 tbsp olive oil
- 1 red onion chopped
- 3 cloves garlic roughly chopped
- 2 tsp chopped fresh ginger
- 1 can fire roasted tomatoes
- ¼ cup bone broth
- 2 tsp coriander
- 1 tsp chili powder
- ½ tsp turmeric
- ½ tsp cumin
- ½ tsp smoked paprika
- 2 cod fillets if using frozen, make sure they are thawed
- 2 tbsp parsley
Get Recipe Ingredients
Add oil to a pan and place over medium heat. Add in onions, garlic and ginger, and saute until onions are translucent (about 10 minutes).
Add in the fire roasted tomatoes, bone broth, coriander, chili powder, cumin, turmeric and smoked paprika, and stir well. Let cook for about 2-3 minutes.
Pour contents of pan into a blender and blend until smooth. Pour contents of blender back into the pan, add in the cod fillets, and let simmer about 10-15 minutes.
Enjoy with naan and Yuengling.
