Potato Shakshuka

A fresh, well-spiced tomato sauce envelops The Little Potato Company Creamer potatoes and eggs in this tasty, one-pandish.

Ingredients

  • 2 tbsp oil
  • 1 red onion
  • 4 garlic cloves
  • 1 inch piece of ginger
  • 5 large tomatoes
  • 3 tsp coriander
  • 2 tsp smoked paprika
  • ½ tsp turmeric
  • 3 eggs
  • Salt and pepper to season
  • Cilantro and chili flakes to garnish
  • 1.5 lb The Little Potato Company Dynamic Duo bagged Creamer potatoes

Instructions

  • Preheat oven to 375 degrees.
  • Peel and chop the onion, garlic and ginger.
  • Place a large, oven safe pan on the stove top with 2 tbsp oil in it.
  • Add the chopped onion in the pan and saute 5 minutes.
  • Add in the ginger and garlic and saute another 5 minutes.
  • While the garlic and ginger are sauteing, chop the tomatoes and add them to the pan along with the coriander, smoked paprika, and turmeric.
  • Then open the package of potatoes and add them into the pan and spread them. 
  • Place the pan in the oven and bake at 350 for 25 minutes. 
  • Remove the pan from the oven (do not turn off the oven) and move the potatoes aside to make 3 “holes” and break the eggs into the holes.
  • Place pan back in the 350 degree oven and bake 10 minutes.
  • Remove from the oven and season with salt and pepper and garnish with chopped cilantro and chili flakes as desired.

Notes

*You can add a can of drained beans or canned lentils to this shakshuka or enjoy it as is.
