Three ingredients and about 10 minutes are all you need to make these Date Energy Balls. These no-bake plant-based treats are gluten-free and refined sugar-free, and the perfect midday pick-me-up.

Ingredients

  • 2 cups Medjool dates pitted
  • 2 cups pecans
  • 2 tsp pure vanilla extract
  • pinch of salt

Instructions

  • Add the Medjool dates, pecans, vanilla extract, and pinch of salt to a food processor or a high-powered blender (like a Vitamix) and process/blend until all the ingredients are fine and easy to roll.
  • Then gather spoonfuls of mixture and roll into balls.
  • OPTIONAL - you can roll some of the date energy balls in coconut powder and/or chopped pecans, or serve them as they are.
  • Place date energy balls in an airtight container and chill for an hour or so.
  • Enjoy chilled as a treat or midday pick-me-up!
