Topped with a crisp and sweet streusel topping, these Easy Strawberry Streusel Muffin Tops with White Chocolate are a delicious, versatile, and portable breakfast or snack.

Ingredients

For the muffin tops:

  • 1/2 cup All-Purpose Flour
  • 1/2 cup Almond Flour
  • 1/4 cup Granulated Sugar
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/8 teaspoon Salt
  • 1/4 tsp Cinnamon
  • 1/4 teaspoon Cardamom
  • 1 Egg beaten
  • 2 tablespoons Almond Milk
  • 3 tablespoons Olive Oil
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 tsp Almond Extract
  • 1/2 cup fresh Strawberries diced
  • 1/2 cup White Chocolate Chips

For the streusel topping

  • 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • 1 1/2 tbsp butter I used vegan butter
  • 4 tbsp all-purpose flour

Instructions

  • Preheat oven to 400 degrees.
  • Add in the egg and beat it well, then add in the almond milk, olive oil, almond extract, and vanilla extract and mix well with a spoon.
  • Then add the all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, cinnamon, and cardamom to the bowl with the wet ingredients and stir well.
  • Add in the diced strawberries and white chocolate chips and mix gently.
  • Then, pile 4 roughly equal mounds of dough onto a baking tray – making sure they are spaced far apart.
  • Then make the streusel topping by melting the butter slightly. Add in the granulated sugar and brown sugar and mix well. Then add in the all-purpose flour and crumble the mixture together so little crumbs form.
  • Sprinkle the crumb topping over the four muffin tops.
  • Place tray with muffin tops, in 400 degrees Fahrenheit preheated oven and bake for 5 minutes.
  • Lower oven temperature to 375 degrees and bake for another 25 minutes.
  • Let cool and enjoy.
