Broccoli Croquettes

Crispy on the outside and soft on the inside, these little Broccoli Croquettes, or Broccoli tots, are deliciously spiced and sure to please everyone.

Ingredients

  • 3 tbsp olive oil
  • 2 baking potatoes 3 cups when cooked and roughly mashed with fork
  • 2 cups broccoli crowns
  • 5 tsp coriander powder
  • 3 tsp smoked paprika powder
  • 1/2 tsp turmeric powder
  • 1/2 inc chunk ginger 3 tsp when diced
  • 4 cloves garlic 3 tsp when chopped
  • 1 yellow onion
  • 3 tbsp Parsley
  • 3 tsp chili flakes - OPTIONAL
  • Salt and pepper to taste
  • 1 Egg wash or plant based milk
  • 1 cup breadcrumbs
  • Oil for frying

Instructions

  • First, prep, the potatoes and either bake them or boil them until soft. However, if you have some baked potatoes on hand, or buy some baked potatoes, please feel free to use these instead to save on time.
  • When the potatoes are cooked, remove the skin and roughly mash them, and set them aside.
  • Peel and chop the onion, ginger, and garlic.
  • Add olive oil to a pan set over medium heat and add in the chopped onion, ginger, and garlic. Let sauté for about 10 minutes.
  • Then add in the roughly mashed cooked potatoes, turmeric, coriander, smoked paprika, chili flakes (if using), and parsley and sauté for about 5 minutes.
  • Let mixture cool enough to handle and form into balls.
  • Add egg to a bowl and stir it well.
  • Then add the breadcrumbs to a plate.
  • Dunk the balls in the egg wash and then the breadcrumbs, so they are fully coated. Repeat this with all the balls.
  • Add the oil you will be using for frying these, into a deep pan and set over the stove set to medium or high heat.
  • When the oil is hot, add the balls into the oil and as soon as they turn golden brown, remove them and drain them on paper towels. Repeat until all the balls are fried.
  • Enjoy warm!
