This blended, dairy-free Papaya Chia Pudding is made with just a few ingredients such as almond milk, papaya, chia seeds, a splash of almond extract, and a pinch of cinnamon and cardamom. It is perfect for a grab-and-go breakfast, snack, or dessert. 

Ingredients

  • 1/4 cup chia seeds I used black chia seeds
  • 1 cup almond milk
  • 2 cups of a ripe papaya
  • 1-2 tbs maple syrup optional if papaya is very ripe and sweet
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/8 tsp pinch of salt
  • 1/2 tsp almond extract

Instructions

  • Place the chia seeds, almond milk, papaya, cinnamon, cardamom, salt, and almond extract in a high-powered blender and blend on high until all ingredients are well incorporated and the chia seeds look to be broken up.
  • Taste the pudding to check its sweetness. If not too sweet, add in the maple syrup and blend again for a couple of seconds. If the pudding is sweet, then leave out the maple syrup.
