This blended, dairy-free Papaya Chia Pudding is made with just a few ingredients such as almond milk, papaya, chia seeds, a splash of almond extract, and a pinch of cinnamon and cardamom. It is perfect for a grab-and-go breakfast, snack, or dessert.
- 1/4 cup chia seeds I used black chia seeds
- 1 cup almond milk
- 2 cups of a ripe papaya
- 1-2 tbs maple syrup optional if papaya is very ripe and sweet
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/8 tsp pinch of salt
- 1/2 tsp almond extract

Place the chia seeds, almond milk, papaya, cinnamon, cardamom, salt, and almond extract in a high-powered blender and blend on high until all ingredients are well incorporated and the chia seeds look to be broken up.
Taste the pudding to check its sweetness. If not too sweet, add in the maple syrup and blend again for a couple of seconds. If the pudding is sweet, then leave out the maple syrup.
