This delicious 3 ingredient Cherry Chicken is an easy and healthy meal option. Pair it with some yellow rice and veggies for a tasty and wholesome meal.

Ingredients

  • 2 Tablespoons oil of your choice
  • 16 oz chicken tenderloins
  • 3 Tablespoons cherry chutney i used homemade, the recipe is linked in the directions
  • 2 Tablespoons Harissa
  • Salt and pepper to taste
  • OPTIONAL: Parsley for garnish

Instructions

  • Remove the chicken tenderloins from the package and cut into bite-sized pieces.
  • Add the chicken pieces to a bowl and add in the cherry chutney and the harissa, and mix well and set aside.
  • Add the oil to a skillet or heavy-bottomed pan and add the spiced chicken tenderloin pieces to the hot pan.
  • Let saute about 2 minutes to 2.5 minutes, then flip pieces over and let saute another 2 minutes to 2.5 minutes or until chicken is cooked.
  • Cover the pan with the chicken in it and set aside for about 5 minutes.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with parsley, if desired.
