Air Fryer Zucchini Fries (Gluten Free)

Sporting a delicious crunch, these Air Fryer Zucchini Fries are sure to tease your tastebuds with a hint of chili, smoked paprika and coriander. Read on to check out the recipe.

Ingredients

  • 3 zucchini small
  • 1 cup almond flour
  • 2 + 1 tsps coriander
  • 2 + 1 tsps smoked paprika
  • 1 + 1/2 tsp chili powder
  • 1/2 + 1/2 tsp salt
  • 1/2 + 1/2 tsp pepper
  • 2 eggs for egg wash
  • Cooking oil spray

Instructions

  • Add almond flour, 2 tsps smoked paprika, 2 tsps coriander, 1 tsp chili, 1/2 tsp salt and 1/2 tsp pepper to a plate and mix well.
  • Add eggs, other 1 tsp coriander, 1 tsp smoked paprika, 1/2 tsp chili, 1/2 tsp salt and 1/2 tsp pepper to a bowl and mix well.
  • Slice the zucchini lengthwise into "fries"
  • Using one hand, dip zucchini into the spiced egg wash, then, place it on the plate with the spiced almond flour.
  • Using your other hand, dredge zucchini fries in the almond flour mixture, making sure they are well coated. Repeat until all the zucchini fries are done.
  • Heat air fryer to 390 degrees.
  • Then place batches of zucchini into the air fryer (making sure they are not overlapping too much or they won't be crunchy). Spray with cooking spray and air fry for 7-9 minutes ~ I did 4 batches.
