Black-Eyed Pea Fritters with Greens

These 11-ingredient Black-Eyed Pea Fritters with Greens are a tasty, gluten-free, plant-based appetizer or snack. They are a fun spin on the Southern staple of black-eyed peas and greens for good luck in the new year.

Ingredients

  • 3 tsp coriander
  • 2 tap smoked paprika
  • 1/2 tap turmeric
  • 1 tsp Cayenne
  • 3 medium potatoes cooked (approx 3 cups)
  • 1 red onion
  • 3 garlic cloves
  • 1 inch chunk of fresh ginger
  • 1 cup frozen Black Eyed Peas
  • 1 cup frozen spinach
  • 2 tbsp Parsley
  • salt and pepper to taste
  • 2 tbsp cooking oil
  • cooking spray

Instructions

  • First off, boil the potatoes. When they are boiled, peel them and add them to a large bowl. Roughly mash them up and set them aside.
  • Then, peel the onion, ginger, and garlic. Then, chop them all up as small as you can.
  • Add the 2 tbsp of cooking oil to a pan and add in the onion, ginger, and garlic. Saute for about 10 minutes over medium heat, stirring often.
  • Then, add in the frozen spinach and frozen black-eyed peas and stir well.
  • Then add in the cayenne, coriander, smoked paprika, and turmeric and stir until all spices are incorporated well.
  • Remove the pan from heat and add the mixture into the cooked potatoes and mix well.
  • When the mixture is cool enough to handle, grab handfuls of mixture up. Shape into patties and place patties in an airfryer or a silpat lined baking tray.
  • If Airfrying:
    Preheat air-fryer to 425 degrees, then place formed fritters on air-fryer tray and air-fry for 10 minutes. Open the air fryer, flip over the fritters, and air fry another 10 minutes.
  • If Baking:
    Preheat oven to 400 degrees, place the formed fritters onto a Silpat-lined baking tray and bake for 10 minutes. Remove pan from oven, flip fritters over and bake for another 15 minutes. Let fritters cool completely before enjoying.
