Whipped up in a blender, these not-to-sweet, Honey Almond Cereal Muffins with Post Honey Bunches of Oats Makes it possible to enjoy cereal anytime!
- 1.5 cups brown rice flour or you can use all purpose flour
- 2 teaspoons baking powder
- 3 tablespoons brown sugar
- 1/3 cup honey
- 1/2 cup milk slightly warmed but not boiling, I japed mine in the microwave for 20 seconds
- 2 eggs
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 4 tablespoons coconut oil melted
- 2 cups cereal I used 1 cup Honey Bunches of Oats Honey Roasted and 1 cup Honey Bunches of Oats Almond
Get Recipe Ingredients
Preheat the oven to 350 degrees
Line a muffin tray with muffin cups
Add the brown rice flour, baking powder. brown sugar, honey, milk, coconut oil, salt, cinnamon, and eggs to a blender and pulse till all ingredients are well incorporated.
Using a spatula, mix in the cereal.
Let mix sit for about 10-15 minutes
Then, spoon into lined muffin tray and bake for 20-22 minutes.
