Vegetarian and delicious, this broccoli gratin is infused with flavor from sautéed onions, ginger, garlic, sundried tomatoes, and cranberries – making this a tasty lighter dish to serve up for Thanksgiving and the holidays.
- 2 tbsp olive oil
- 1 onion
- 4 cloves garlic
- 1- inch piece of ginger
- 3 cups broccoli crowns chopped roughly
- ½ cup Stahlbush frozen cranberries
- ¼ cup sundried tomatoes
- ¼ cup panko breadcrumbs
- Salt and pepper to taste

Peel and chop onion, garlic cloves, and ginger.
Pre-heat oven to 375 degrees.
Add oil to an oven-safe pan or skillet and add in the onion. Sauté for 5 minutes over medium heat, stirring often.
Add in the ginger and garlic and sauté for another 5 minutes.
Add in the broccoli and sauté for another 5 minutes, stirring often.
Then add in the sundried tomatoes and frozen cranberries and stir well.
Season with salt and pepper.
Sprinkle on the breadcrumbs and bake for 15 minutes
Remove from oven when breadcrumbs are golden and enjoy.
