Flavored with ginger and garlic, this Brussels Sprouts Kale Sauté with Cranberries & Walnuts is a nutritious addition to your holiday table.
Ingredients

oil

red onion
4
cloves
garlic

inch
chunk of ginger
3
cups
of kale chopped
2
cups
of Brussels Sprouts chopped
1/2
cup
dried cranberries
1/2
cup
walnuts
salt and pepper to taste

Instructions
Peel and chop the red onion - BTW, this
video
makes onion chopping super easy.
Peel and chop the garlic and ginger as well.
Add oil to a large frying pan and place over a medium heat.
Add in onion and saute about 10 minutes, stirring often so it does not burn. You just want a very light caramelization.
Add in ginger and garlic and stir.
Then add in the chopped Brussels Sprouts and saute another 10 minutes.
Add in the kale and saute about 1 minutes.
Add in the dried cranberries and walnuts and stir well - as soon as kale starts wilting (within another minute or so), remove heat.
Season with salt and pepper and enjoy.
