Flavored with ginger and garlic, this Brussels Sprouts Kale Sauté with Cranberries & Walnuts is a nutritious addition to your holiday table.

Ingredients

  • 2 tbsp oil
  • 1 red onion
  • 4 cloves garlic
  • 1 inch chunk of ginger
  • 3 cups of kale chopped
  • 2 cups of Brussels Sprouts chopped
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts
  • salt and pepper to taste

Instructions

  • Peel and chop the red onion - BTW, this video makes onion chopping super easy.
  • Peel and chop the garlic and ginger as well.
  • Add oil to a large frying pan and place over a medium heat.
  • Add in onion and saute about 10 minutes, stirring often so it does not burn. You just want a very light caramelization.
  • Add in ginger and garlic and stir.
  • Then add in the chopped Brussels Sprouts and saute another 10 minutes.
  • Add in the kale and saute about 1 minutes.
  • Add in the dried cranberries and walnuts and stir well - as soon as kale starts wilting (within another minute or so), remove heat.
  • Season with salt and pepper and enjoy.
