Start off by adding 1/2 cup of gluten-free All Purpose Flour to a bowl...
Also, add 1 cup of gluten-free rolled oats...
Then add in the 1/3 cup brown sugar...
And, the teaspoon of baking powder...
Also, add the 1/2 teaspoon of cinnamon...
Then, mix all these dry ingredients together.
Then, add in 1 egg, 1/2 cup softened/melted butter, 1 teaspoon vanilla, and mix well
Then finally, you stir in 2 - 3 tablespoons of chopped-up candied ginger pieces
Form into circles, flatten the circle a bit...and...
Bake for 15 minutes on a parchment-lined or silpat-lined baking tray, at 350 degrees.
Remove from oven and let cool
When cookies have cooled down, melt about a 1/4 cup of white chocolate chips and drizzle on top of the cookies.
