Candied Ginger Oatmeal Cookies (Gluten Free)

These soft and chewy Candied Ginger Oatmeal Cookies are delightfully delicious. Their white chocolate drizzle balances off the bits of candied ginger in them, and, they just happen to be gluten-free!

Ingredients

  • 1/2 cup of gluten free all purpose flour
  • 1 cup of gluten free rolled oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 teaspoon vanilla
  • 2 - 3 tablespoons of chopped up candied ginger pieces
  • 1/4 cup of white chocolate chips

Instructions

  • Start off by adding 1/2 cup of gluten-free All Purpose Flour to a bowl...
  • Also, add 1 cup of gluten-free rolled oats...
  • Then add in the 1/3 cup brown sugar...
  • And, the teaspoon of baking powder...
  • Also, add the 1/2 teaspoon of cinnamon...
  • Then, mix all these dry ingredients together.
  • Then, add in 1 egg, 1/2 cup softened/melted butter, 1 teaspoon vanilla, and mix well
  • Then finally, you stir in 2 - 3 tablespoons of chopped-up candied ginger pieces
  • Form into circles, flatten the circle a bit...and...
  • Bake for 15 minutes on a parchment-lined or silpat-lined baking tray, at 350 degrees.
  • Remove from oven and let cool
  • When cookies have cooled down, melt about a 1/4 cup of white chocolate chips and drizzle on top of the cookies.
