With melty cheesy, rosemary, bacon, and beets, this Cheesy Bacon Braised Beets has it all AND it will have you reaping the benefits of beets in one heck of a tasty way!
- 2 slices bacon
- 3 cloves garlic
- 1 red onion
- 2 beets
- 1 sweet potato
- 1/8 teaspoon rosemary
- 1/8 teaspoon thyme
- 1/2 cup chicken stock
- 1 cup cheese I used a blend of mozzarella and cheddar
Get Recipe Ingredients
Preheat brolier to 500
Place bacon slices in a cast iron skillet and cook till done
While bacon is cooking, chop the onion, garlic, sweet potato, and beets
Once the bacon is done, remove it from skillet and drain them
Pour out the bacon fat, leaving behind just that which coats the pan
Add in the onions and garlic and let cook for a couple of minutes over a medium flame - stirring constantly
Add in the sweet potatoes, beets, rosemary, thyme and chicken stock and cook covered for 7 minutes
Remove the cover and cook another 2-3 minutes
Stir the mixture well
Place cheese on top and broil for 2 minutes
Serve warm
