- 1 ripe avocado chopped
- 1/2 red onion chopped fine
- 2 tsp fresh lemon juice
- 2 small gherkin pickles chopped
- 1/2 inch chunk of fresh ginger grated
- 1 clove garlic grated
- 1 can chickpeas drained and rinsed
- 1 tsp chili flakes
- 2 tsps parsley
- 1/4 tsp each salt and pepper
- 1/2 tsp smoked paprika
- 6-8 slices Dave’s Killer Breads 21 Whole Grains and Seeds
Get Recipe Ingredients
Add the avocado to a bowl and mash it up using a fork.
Add in the chopped red onion, lemon juice, chopped gherkin pickles, chickpeas, chili flakes, parsley, salt, pepper, and smoked paprika.
Using a grater, carefully grate the garlic and ginger into the bowl as well.
Using the fork, mix up the ingredients.
Toast up the slices of Dave’s Killer Bread 21 Whole Grains and Seeds, spread them with the Chickpea Avocado Salad, garnish with more parsley and/or chili flakes, and enjoy!
