Lightly crispy on the outside and soft on the inside, these cubed Roasted Sweet Potatoes are gently spiced with coriander, smoked paprika, and turmeric. They are an easy and tasty side dish that pairs well with chicken, fish, turkey, and many more.
- Cooking oil spray
- 2 large sweet potatoes
- 3 teaspoons coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste

Preheat the oven to 425 degrees Fahrenheit (218 Celsius).
Wash and peel the sweet potatoes.
Cut the sweet potatoes into cubes.
Place the cubed sweet potatoes on a silpat-lined baking tray and spray them with some cooking oil.
Add the coriander, smoked paprika, and turmeric to a bowl and mix them. Then, sprinkle the spices over the cubed sweet potato. Toss the cubes so they are well coated with the spice mix.
Then, spray the sweet potato cubes one more time.
Place the baking tray with the sweet potatoes in the 425-degree hot oven and bake for 27–30 minutes, or until the potatoes are lightly crisp on the outside and soft on the inside.
Remove the sweet potatoes from the oven and let them sit on the baking tray for about 5–10 minutes.
Season with salt and pepper to taste and enjoy!
OPTIONAL - If preferred, you can serve these garnished with some chopped fresh parsley.
