This Easy Carrot Raisin Salad is a sautéed, spicy-sweet, healthier spin on the traditional version that is made with mayonnaise. This one is made with only 10 easy-to-find ingredients and can be made in less than 15 minutes.
- 4 small carrots
- 1 onion
- 3 garlic cloves
- 1 inch knob of ginger
- 2 tbsp olive oil or oil of your choice
- 1/4 cup pecans unsalted
- 1/4 cup raisins I used golden raisins
- 3 tsp coriander powder
- 1 tsp smoked paprika
- 2 tsp chili flakes
- 1 tbsp parsley
- Salt and pepper to taste

Start off by peeling the onion, ginger knob, and garlic cloves. Once they are peeled, chop them up. They do not have to be super fine.
Then, wash and grate the carrots. You could peel them if you prefer and then grate them, or simply grate them as is.
Add the olive oil to a large, heavy-bottomed pan and add in the chopped onions, ginger, and garlic. Let these sauté for about 10 minutes, stirring so often, so they do not stick and burn.
Then add in the coriander, smoked paprika, and chili flakes and mix well.
Turn the stove off.
Add in the grated carrots, pecans, and raisins. Mix so all ingredients are well incorporated.
Season with salt and pepper to taste.
Garnish with parsley (either fresh or dried) and enjoy!
