Sweet, tart, and spicy, this easy cherry chutney is a delicious condiment that pairs well with everything from crackers and cheese to chicken.

Ingredients

  • 1 TBSP coconut oil or oil of your choice
  • 1 cup ripe cherries
  • 1 onion
  • 1 inch grated fresh ginger about 2 tsp grated ginger
  • 2 lg clove garlic
  • 1/4 cup maple syrup or honey
  • 1/4 cup red wine vinegar
  • 1/2 tsp coriander
  • 1/2 tsp smoked paprika
  • 1/4 tsp cardamom
  • 1/4 tsp cinnamon
  • 1/2 tsp cayenne powder
  • salt and pepper to taste

Instructions

  • Wash and pit the cherries.
  • Peel and chop up the onion, ginger, and garlic.
  • Add the oil to a small, heavy-bottomed pan and place it on a stovetop set at medium heat.
  • Add in the onion, garlic, and ginger and sauté for about 5 minutes, stirring often.
  • Then add in the cherries, maple syrup, red wine vinegar, coriander, smoked paprika, cardamom, cinnamon, and cayenne.
  • Cover the pan and turn and let the ingredients cook for about 5 minutes.
  • Then, turn off the stove and uncover the pan.
  • Now, you have 2 options. One is to let this cool and serve it as is. Or, use an immersion blender or blender to blend this up so it's more like a chunky spread.

Notes

Make sure the cherries are all pitted. You could use a cherry pit remover. Or, you can do like I did, and savagely rip out the pit from the cherries with your bare hands. Of course, the riper the cherry, the easier this is to do.
The finer you dice/chop the onion, ginger, garlic, and cherries, the less chunky the chutney will be. This is especially great when you do not plan to or have a blender or immersion blender on hand.
