This Easy Three Beans and Greens Stew is a semi-homemade soup that uses a mix of canned soups and veggies for a delicious and creamy soup perfect for a busy night when you want a quick and filling dinner.
- 2 tbsp extra virgin olive oil
- 1 yellow onion
- 3 cloves garlic
- 2 tsp fresh ginger
- 1 10.5 oz can Campbell's® Condensed Cream of Mushroom Soup
- 3 cups Swanson® Chicken Broth
- 2 tsp smoked paprika
- 3/4 tsp turmeric
- 1 15 oz can chickpeas
- 1 15 oz can pinto beans
- 1 15 oz can black beans
- 1 cup spinach or kale cut up
- green onions and roasted chestnuts to garnish.
Get Recipe Ingredients
Add olive oil to a pan and when slightly warm, add in the onions and saute for about 10 minutes, stirring often.
Then add in the garlic and ginger as well as Campbell's® Condensed Cream of Mushroom Soup, Swanson® Chicken Broth, paprika, and turmeric and stir till well combined.
Add in the 3 beans and spinach and let cook for about 3 minutes. Serve warm, garnished with green onions and chestnuts.
