Add the frozen peas to a small bowl and fill that bowl with enough water to cover the peas.
Boil (or bake) a large potato until it is cooked through. Or, you could also use a leftover baked one if you have one on hand. If you are using a leftover potato that has been in the fridge, place it in a microwave-safe dish and microwave it until it is warmed through. This helps it mash easily.
When the potato is cooked, place the warm potato in a bowl, and using a fork, mash it up well. However, the chopping and sautéing of the onion, ginger, and garlic can take place simultaneously as the potato cooks.
Peel and chop the onion, ginger, and garlic.
Add some olive oil to a skillet and place it over a stovetop set to medium heat.
Add the chopped onion, ginger, and garlic to it and sauté them for about 8 minutes. When they are ready, add them to the large bowl with the mashed potato.
Add in the spices and salt.
Drain the green peas and add them in to the bowl as well.
Then, mix all the ingredients together. I did this by hand.
Gather up a tablespoon or two of the mixture in your hand and shape it into a circle. Then flatten it so it looks like a patty. Repeat until the mixture is used up.
Spray the patties with some cooking spray or brush with some olive oil.
Add these patties to the basket of an air fryer that has been preheated to 375 degrees Fahrenheit and air fry for about 15 minutes until they are golden brown.
