- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup brown sugar
- 1 tsp cinnamon
- 2 eggs beaten
- 1/3 cup coconut oil melted
- 1 tsp vanilla extract
- 3/4 cup mashed ripe bananas about 4 bananas
- 1/2 cup pecans
- 3/4 cup crushed pineapple very well drained

Preheat oven to 350 degrees F (177 C)
In a large bowl, combine the flour, baking powder, salt, sugar, and cinnamon.
Add in the beaten eggs and oil, stirring with a spoon/spatula (do not use an electric mixer). Add in the vanilla and mashed bananas, pecans and pineapple and mix with the spatula.
Line a 9x13 inch baking tray with parchment paper. Then, pour/spoon the batter into it. Bake for 30-35 minutes. Insert a toothpick to make sure the center is done. Let cool completely and cut into 15 pieces. Enjoy as is or you can dust with powdered sugar or smear with a cream cheese frosting!
