Easy Hummingbird Cake Bars

The classics that make up Hummingbird cake: such as pineapples, pecans and bananas, unite in these delicious yet Easy Hummingbird Cake Bars - which make one heck of a delicious snack or dessert, anytime of the day!

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • 2 eggs beaten
  • 1/3 cup coconut oil melted
  • 1 tsp vanilla extract
  • 3/4 cup mashed ripe bananas about 4 bananas
  • 1/2 cup pecans
  • 3/4 cup crushed pineapple very well drained

Instructions

  • Preheat oven to 350 degrees F (177 C)
  • In a large bowl, combine the flour, baking powder, salt, sugar, and cinnamon. 
  • Add in the beaten eggs and oil, stirring with a spoon/spatula (do not use an electric mixer). Add in the vanilla and mashed bananas, pecans and pineapple and mix with the spatula. 
  • Line a 9x13 inch baking tray with parchment paper. Then, pour/spoon the batter into it. Bake for 30-35 minutes. Insert a toothpick to make sure the center is done. Let cool completely and cut into 15 pieces. Enjoy as is or you can dust with powdered sugar or smear with a cream cheese frosting!
