Sweet, ripe mangoes and cardamom are a delicious pairing in this no-bake easy mango custard. Dairy-free and with only 5 ingredients, this recipe is sure to delight vegans and non-vegans alike with it’s lusciously creamy texture and taste.

Ingredients

  • 2 mangoes I used Alphonso mangoes
  • 2 tbsp coconut flour
  • 1/4 cup coconut milk at room temperature I used Chaokoh Coconut Milk
  • 3 tbsp coconut oil melted
  • 1/4 tsp cardamom

Instructions

  • Peel the mangoes and chop the mango flesh off the seed.
  • You can melt the coconut milk by placing it in a microwave safe dish and heating it for 20 seconds or so.
  • Add the mango to a blender. Also add in the coconut flour, coconut milk, melted coconut oil, and cardamom to the blender and blend on high until all ingredients are well combined into a smooth consistency.
  • Spoon the mango custard mix into individual bowls or one large bowl and refrigerate for 6-8 hours until set.
  • Enjoy with some whipped coconut milk and pistachios or plain!
