Packed with sweet potatoes, Brussels Sprouts, onions, garlic, lime and smoked sausage and topped with an egg - this is one delicious dish to enjoy any time of the day.
- 1 Eckrich Polska Kielbasa Natural Casing Rope Smoked Sausage sliced
- 2 tbsp olive oil
- 1/2 lime
- 1/2 onion - chopped
- 2 cloves garlic
- 1/2 sweet potato - cubed
- 8 large Brussels Sprouts - sliced
- 1 egg
- 1 tspn parsley
- 1 tbsp chili flakes optional
Get Recipe Ingredients
Add sliced Eckrich Polska Kielbasa Natural Casing Rope Smoked Sausage to a skillet and saute till done, then remove from skillet and set aside.
Preheat oven to 350
Add onions to skillet and some olive oil (as needed) and saute for about 5 minutes.
Add in the garlic and sweet potato and lime and cover and let saute for about 10 minutes
Then add in the Brussels sprouts and saute for about 5 minutes or so
Make a small well on the top of the veggies and sausage and break the egg into it and bake for 10 minutes at 350 degrees.
Garnish with chili flakes and parsley and enjoy.
