Easy Spicy Veggie Fritters

Sneak veggies into tailgating season with these 7-ingredient Spicy Veggie Fritters. These fritters are a quick and easy, portable snack that is gluten-free and dairy-free.

Ingredients

  • 2 medium yellow potatoes - boiled
  • 3/4 cup frozen peas thawed
  • 1 carrot peeled and chopped
  • 1 small red onion chopped
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp Frank's RedHot® Original Cayenne Pepper Sauce
  • Salt and pepper to taste

Instructions

  • Remove the skin off some boiled potatoes or baked potatoes. Then add the potatoes to a dish and mashed them up.
  • Remove the skin off the onion and dice it well and add it to the dish with the potatoes.
  • Clean and grate a carrot and add it to the bowl as well
  • Thaw the frozen peas by placing them in a microwave-safe bowl with some water and microwaving them on high for a minute or so. Then, drain and add them to the bowl as well.
  • Clean and chop up the parsley and cilantro and add them to the bowl along with Frank’s RedHot Original Cayenne Pepper Sauce and some salt and pepper to taste.
  • Mix well so all ingredients are well incorporated.
  • Then gather up a large spoonful of this mixture and form it into patties.
  • Spray patties with cooking oil.
  • Air fry patties in pre-heated air fryer set to 425 degrees for 10 minutes. Then open air-fryer and flip patties around and air-fry them for another 10 minutes or until crisp.
