After tasting this Easy Zucchini Sausage Flatbread, my daughter suggests we start a family tradition of Flatbread Friday ~ check out the recipe and let me know if you will be joining us?
- 1 zucchini
- 1 red onion
- 1 cup Eckrich Turkey Skinless Smoked Sausage Rope
- 4 pita bread
- 1 cup approx mozzarella cheese shredded
- parsley chili flakes to garnish
- 1 tbsp olive oil
Get Recipe Ingredients
Pre-heat oven to 350 degrees
Peel and dice the red onion.
Add oil to a frying pan over medium heat and add in the diced onion and let onion saute about 5 minutes, stirring a little.
While the onion sautes, cut up 1 rope of Eckrich Turkey Skinless Smoked Sausage (approx 1 cup).
Push the onion to the sides of the pan and add the sliced Eckrich Turkey Skinless Smoked Sausage into it. Let sausage cook for about 2-3 minutes, then, carefully, flip the slices over and let cook another 2-3 minutes.
While the sausage cooks, cut up the zucchini and add it to the pan with the sausage and onion, and remove off the heat.
Take the pita bread, divide the mozzarella between the pita bread. Add on as little or as much of the zucchini sausage mixture, garnish with parsley and pepper flakes if desired and bake for 10 minutes (or until cheese melts) in a 350 degree oven.
