Slightly soft and slightly crunchy, these 11-ingredient, cinnamon and cardamom spiked, refined sugar-free, gluten-free, eggless waffles play a huge part in making our weekends wonderful ~ hope they do yours as well.
Make a flax egg by mixing together the 1 tbsp flaxseed meal and 3 tbsp water and let it sit for 5-7 minutes.
In the meantime, mix the gluten-free flour, almond flour, baking powder, salt, cinnamon, and cardamom together.
Then add in the flax egg, the oil, coconut milk, almond extract, and vanilla extract and mix well.
Heat a wafflemaker and add 3-4 spoonfuls of mix to wafflemaker, close the wafflemaker and let it work it's magic!
Repeat until all the batter is used up.
Notes
These waffles can be made ahead and refrigerated or frozen. If frozen, you can thaw them out by leaving them on the counter for 30 minutes or so or popping them in a toaster oven.
