Gently spiked with cloves and cardamom, these gluten-free Eggnog Cardamom Cookies are sure to delight your senses. Delightfully aromatic, slightly chewy and simply delicious, they would be a wonderful addition to your Christmas Cookie list!
- 1 cup brown rice flour
- 1/4 cup rolled oats
- 3/4 teaspoon baking powder
- 1/4 teaspoon cardamom
- 2 pinches cloves
- 1/2 cup cane sugar
- 1/4 cup coconut oil melted
- 1/4 cup eggnog
- 1 teaspoon vanilla
- 1 egg yolk
Get Recipe Ingredients
Add all the dry ingredients: the brown rice flour, oats, baking powder, cardamom, cloves, and cane sugar to a bowl and give them a good stir.
Make a well in the dry ingredients and pour in the coconut oil, the eggnog, vanilla and egg yolk and stir well.
Place cookie batter in the fridge for about 30-45 minutes till it firms up some.
Meanwhile, preheat the oven to 310 degrees.
When batter is firm enough to handle (it shouldn't be coating your hands) roll it into balls, place balls on a parchment line baking tray and bake for 20 minutes.
Let cool and enjoy.
