Green Pea Curry (with frozen green peas)

Flavorful and aromatic, this Green Pea Curry is an easy, tasty, one-pot side dish that will pair beautifully with everything from rice to roti.

Ingredients

  • 3 Tbsp olive oil
  • 12 oz pkg frozen green peas
  • 2 onions yellow or red
  • 4 cloves garlic
  • 1 inch chunk ginger
  • 4 tsp powdered coriander
  • 2 tsp powdered smoked paprika
  • 1 tsp powdered cayenne
  • 1/4 tsp powdered cardamom
  • 1/4 tsp powdered cloves
  • 1/4 tsp powdered cinnamon
  • 1 tsp powdered turmeric
  • 1 cup Coconut milk
  • 1 cup Fire roasted tomatoes
  • 1 cup water
  • salt and pepper to taste
  • Parsley & chili flakes for garnish [OPTIONAL]

Instructions

  • Peel the onions, ginger, and garlic, and then chop them up as fine as possible.
  • Add the olive oil to a large, heavy bottom pan and add in the chopped onions, ginger, and garlic, and sauté for about 10 minutes, stirring often.
  • Then add in the coriander, smoked paprika, cayenne, cardamom, cloves, cinnamon, turmeric, Coconut milk, the Fire roasted tomatoes, and water and stir well until all ingredients are seamlessly incorporated - about 2 minutes or so.
  • Add in the package of frozen peas and stir well.
  • Then, cover the pan and let simmer on a low flame/temperature for about 5–7 minutes.
  • Season with salt and pepper to taste.
  • Garnish with parsley and chili flakes if desired and serve warm.
