Peel the garlic cloves and discard the skin.
Dice the garlic cloves or grate them and add them to a bowl.
To the same bowl, also add olive oil and lemon juice.
Wash, dry, and finely chop up the parsley and cilantro and add to the same bowl.
Stir all ingredients really well so lemon juice and oil are well incorporated with other ingredients as well.
Season with salt and pepper to taste.
Cook the pasta according to package directions and rinse with cold water so it is cool.
While the pasta cooks, slice the avocado in half, discard the seeds and remove the skin.
Brush each half with the lemon garlic herb dressing and grill them for about a minute or two on each side.
Remove the avocado from the grill and cut it into bite-sized pieces.
Add avocado to a large serving bowl. Also, add in the cooled pasta.
Add in the sundried tomatoes as well.
Drain and rinse the black beans and measure out a cup and add it to the bowl with the sundried tomatoes, pasta, and grilled avocado.
Then pour in the dressing and gently toss the ingredients together so all ingredients are coated with the dressing and well distributed.
All that’s left is to dig in!
