Sneak a little chocolate into your morning with these Hemp Chocolate Breakfast Cookies. Packing a hefty nutritious punch, these cookies are just the right amount of sweet to get you energized to face the day.

Ingredients

  • 1/2 cup rice flour can be subbed with 1/2 cup ground oats
  • 1/2 cup almond meal can be subbed with 1/2 cup ground oats
  • 1/4 teaspoon salt
  • 2 tablespoons Hemp Hearts
  • 1/4 cup cocoa
  • 2 oz roughly chopped dark chocolate 1/3 cup
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 egg
  • 1/3 cup melted coconut oil can be subbed with melted butter

Instructions

  • These chocolate hemp cookies are so easy to make.
  • Preheat your oven to 375 degrees Fahrenheit or 190 degrees Celsius.
  • Add the almond meal, rice flour, salt, hemp hearts, baking powder, brown sugar, and cocoa to a large bowl. Using a spatula or spoon, mix all the dry ingredients.
  • Then, chop the chocolate and add it in. Or, if using chocolate chips, add those in at this time.
  • Add the egg and melted coconut oil to the flour mixture and mix well
  • Form into 6 balls and gently flatten them slightly.
  • Place each disc of cookie dough onto a parchment paper-lined baking tray.
  • Bake these cookies for 10 – 12 minutes. Then, remove from the oven and let cool.
  • I like to drizzle these with some melted semi-sweet chocolate and let that set.
  • These are so tasty with my morning coffee or as an afternoon snack with a cold glass of non-dairy milk.
