*If you would like puffier cookies, before refrigerating dough, separate it (using a scoop or spoon) into balls and then place in the refrigerator for a couple of hours. The coconut oil will harden up and make it hard to manipulate the dough at this point that is why the cookies are separated first. Place the chilled dough onto a parchment lined baking tray and bake as mentioned above.
