This Spicy Sweet Mango Chicken Veggie Skillet Saute was delightful to enjoy ~ with sweet mangoes and slightly caramelized onions and spicy jalapenos balancing each other out, this can be enjoyed alone or with a side of quinoa or rice.
- 1 tbsp Armour Premium All Natural Lard
- 1 onion diced
- 2 cloves garlic diced
- 1 tsp fresh ginger grated
- 2 alphonso mangoes cut up
- 4 medium chicken breasts chopped up
- 2 carrots diced
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 1 14.5 oz can diced tomatoes
- 2 tsp smoked paprika
- salt and pepper to taste
- parsley to garnish
Get Recipe Ingredients
Add the Armour Premium All Natural Lard into a pan over medium heat along with the diced onion. Let onion saute about 20 minutes, stirring occasionally.
Add the grated ginger, diced garlic, and cut up alphonso mangoes to the pan and saute another 5 minutes or so.
Add the chicken breasts and saute about 15 minutes, then add in the chopped carrots, red and green bell peppers, can of tomatoes, as well as the smoked paprika and let cook another 10 minutes or so.
Turn flame off, season with salt and pepper, garnish with parsley and enjoy as a main dish or as a side.
