Simple and easy, these little Pinto Bean and Coconut Patties are delightful eaten with a spicy sauce, or sandwiched between buns and eaten as vegetarian sliders!
- 1 15.5 oz can of Pinto Beans
- 1 teaspoon garam masala
- 1/2 an onion
- 2 cloves garlic
- 1/2 inch piece of fresh ginger comes to about 2 teaspoons grated
- 3 tablespoons coconut powder
- 1 egg
- 1 teaspoon pepper
- 1/4 teaspoon salt
- Olive oil
- 1 tablespoon fresh parsley optional

Preheat oven to 400 degrees
Rinse and drain and then add pinto beans, garam masala, onion, garlic, ginger, salt, pepper, coconut powder and egg (and parsley if you are using it) to a blender and pulse a few times till ingredients are well incorporated.
Roll into balls and flatten balls and place on a parchment-lined baking tray.
Brush generously with olive oil and bake for 20 minutes
Remove tray temporarily, brush with more oil and broil for two minutes - keeping an eye on them so they don't burn.
Serve warm with sambal oelek or ketchup or chili sauce
