Preheat oven to 425 degrees F.
Remove any extra leaves off the cauliflower head and cut off the florets – if there are large florets, slice them up.
Rinse the grapes well too and remove them from the stems.
Then add the cauliflower to a large bowl.
To the bowl, also add in the grapes.
Then add in the olive oil and the za'atar and toss well so the cauliflower florets and grapes are well coated with the olive oil and zaatar.
Spread out on a baking tray and place in a 425-degree F oven for 25 minutes.
Then, do not remove the tray from the oven. But, change the bake to broil (broil temp 525 degrees F) and set the timer for 4 minutes.
When done, turn the oven off and remove the tray carefully.
Sprinkle with salt and pepper to taste.
Serve garnished with parsley or plain.
