Ingredients

tbsp
olive oil
1
red onion diced

cloves
garlic smashed and diced
2
carrots diced
2
celery stalks diced
1/2
cup
frozen peas
1
block extra firm tofu dried well and cubed

tsp
cumin
1
tsp
coriander
1
tsp
smoked paprika
salt and pepper to taste
cilantro to garnish
1/2
cup
cooked brown rice
1/2
sauteed
in olive oil and salt and pepper and diced beet
1/2
an avocado diced

boiled eggs diced
Instructions
Add olive oil to a pan and add red onion and saute for about 15 minutes, stirring constantly.
Add in garlic, tofu, cumin, coriander, paprika and saute till tofu is well cooked and browned.
Toss in carrots, peas and celery and cook a couple of minutes.
Season with salt and pepper and garnish with cilantro.
Serve with cooked brown rice, sauteed beets, boiled eggs, and avocado.
