Quick and easy, this spicy broccoli saute is packed with tons of flavor from onions, ginger, garlic and "peanut butter blended with fiery spices"!
- 3 tablespoons extra virgin olive oil
- 1 onion chopped
- 1 inch piece of fresh ginger chopped
- 4 cloves garlic chopped
- 2/3 cup vegetable broth
- 4 tablespoons Peanut Butter & Co The Heat Is On Peanut Butter
- 4 cups broccoli florets
- 1 cup black beans
- Parsley and peanuts for garnish
Get Recipe Ingredients
Add olive oil into a large frying pan on a medium flame
Add the onions, garlic and ginger and saute for about 10 minutes (stirring constantly)
Add the vegetable broth and the peanut butter and stir till well combined
Add the broccoli florets and reduce heat and cover the pan and let cook for 5-7 minutes.
Add the black beans and stir for another couple of minutes
Serve warm with chopped parsley and peanuts
