- 1 ripe pineapple
- 1 ripe papaya
- 2 ripe mangoes
- 2 kiwi
- 2 bananas
- 1 vanilla pod
- 1 can refrigerated full fat coconut milk
Get Recipe Ingredients
Chop the pineapple, papaya, mangoes, kiwi, and bananas and place in a bowl
Let sit for about an hour so all the fruit juices mingle
While waiting, open the refrigerated can of coconut milk and scoop the semi-solid part that has risen to the top, while discarding the water
Place this coconut in a bowl and scoop out the vanilla beans from one pod and place in the same bowl
Using an electric mixer, whip till well incorporated
Divide fruit into bowls
Dollop whipped vanilla coconut topping on top off ruit and enjoy
