Sweet Potato Pistachio Bars

These Sweet Potato Pistachio Bars are low in refined sugar, gluten-free, and absolutely delicious with a cup of coffee or tea. Enjoy these treats for breakfast or as a snack.

Ingredients

  • 2 Sweet potatoes ((Baked or boiled))
  • 1/2 cup Rolled oats
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 tablespoons Sweetener ((Any zero-calorie sweetener would work, but my favorite is Monkfruit))
  • 1/4 cup roughly chopped pistachios

Instructions

  • Discard the skin and mash the baked or boiled sweet potatoes
  • Then mix them with the rolled oats, eggs, baking powder, cinnamon, and sweetener.
  • Spoon the mix into a parchment lined 8x8 baking pan.
  • Top this with the chopped pistachios and pop it into a 350-degree oven for 30 minutes.
  • Let it cool and enjoy it with some coconut whipped cream with a smidge of vanilla and Ssweetener in it, or you can enjoy these bars plain with a cup of coffee.
