These Sweet Potato Pistachio Bars are low in refined sugar, gluten-free, and absolutely delicious with a cup of coffee or tea. Enjoy these treats for breakfast or as a snack.
- 2 Sweet potatoes ((Baked or boiled))
- 1/2 cup Rolled oats
- 3 eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 tablespoons Sweetener ((Any zero-calorie sweetener would work, but my favorite is Monkfruit))
- 1/4 cup roughly chopped pistachios
Discard the skin and mash the baked or boiled sweet potatoes
Then mix them with the rolled oats, eggs, baking powder, cinnamon, and sweetener.
Spoon the mix into a parchment lined 8x8 baking pan.
Top this with the chopped pistachios and pop it into a 350-degree oven for 30 minutes.
Let it cool and enjoy it with some coconut whipped cream with a smidge of vanilla and Ssweetener in it, or you can enjoy these bars plain with a cup of coffee.
