Tofu Burgers With Pineapple BBQ Sauce

These tofu burgers are spiced with an irresistibly sweet and spicy BBQ Pineapple sauce and are a tasty option for non-beef eaters and spice-lovers alike! These burgers also happen to be totally gluten free and vegan.

Ingredients

For the BBQ Pineapple Sauce

  • 1/4 cup pineapple juice
  • 1/2 cup fresh pineapple chunks chopped up 2 thick slices
  • 1 6 oz can of tomato paste
  • 2 tablespoons chopped onion
  • 1/4 cup honey
  • 1 whole Serrano pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon cumin

For the Tofu Burgers

  • 1 14 oz block of extra firm tofu
  • 1 teaspoon grated/chopped fresh ginger
  • 1/2 cup rice flour or any gluten free flour blend
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 tablespoons of BBQ Pineapple Sauce

Instructions

For the BBQ Pineapple Sauce

  • Place the pineapple juice, pineapple chunks, tomato paste, onion, honey, Serrano pepper, cumin, salt and pepper in a saucepan and simmer for 20 minutes
  • Then place this in a blender and blend till smooth and set aside (sauce will be thick)

For the Tofu Burgers

  • Using Viva® Vantage® Towels, drain tofu well and cube
  • Then add cubed tofu to a food processor along with ginger, rice flour, salt, pepper and BBQ Pineapple Sauce and pulse till well incorporated.
  • Then form into circles and flatten circle slightly
  • Brush tofu burgers with oil and grill for 3-4 minutes on each side till firm
  • Serve with grilled pineapple and more sauce brushed on top.
