Tofu Fried Rice Bowls

In these Tofu Fried Rice Bowls, tofu is spiced with coriander, turmeric, and smoked paprika and served with fried rice, red cabbage, grated carrots, and pan-roasted broccoli. These bowls can be ready in 20 minutes and make for a tasty, easy, and quick lunch or dinner.

Ingredients

  • 2 tsp coriander
  • 1/2 tsp turmeric
  • 1 tsp smoked paprika
  • 1 14 oz pkg Extra Firm Tofu
  • 3 cloves garlic
  • 1 red onion
  • 1 egg
  • 1 pkg Ben’s Original™ Ready Rice™
  • 1 cup broccoli florets Optional/substitutable
  • 1/4 of a red cabbage Optional/substitutable
  • 1 carrots Optional/substitutable
  • 2-3 tbsp chopped fresh parsley Optional/substitutable

Instructions

  • First off, remove the tofu from its packaging. Then wrap it in towels to remove as much of the liquid in it as possible.
  • As the tofu sits in towels, peel and chop up the onion and garlic.
  • Next, remove the towels from the tofu and sliced it through its thickness so there are 3 pieces of tofu ~ now, you do not need to follow this method. You can simply cube the tofu instead of cutting them horizontally, sauteing each of the three slices of tofu
    and then cutting them into bite-sized pieces. But, when I am in a hurry, I find it easier to cook the tofu like this and then cut them into bite-sized pieces before returning them to the pan.
  • Then, add oil to a large, deep, frying pan. and add the tofu slices into the pan. Push them to the side, and let them saute for about 5 minutes.
  • To the other side of the pan, add in the red onion and garlic to cook.
  • As the tofu sautes, stir the onions and garlic so they didn’t char.
  • As the tofu sautes, mix the coriander, turmeric, and smoked paprika together and sprinkled half of this spice mix onto the tofu slices.
  • When 5 minutes are up, flip the tofu slices over and let them saute on the spiced side for another 5 minutes.
  • Sprinkle on the remaining spice mix of coriander, turmeric, and smoked paprika onto the tofu slices and flip these over again to cook for about a minute.
  • Then, remove the tofu from the pan and lay it onto a cutting board, and cut the tofu into bite-sized pieces. Place the bite-sized pieces back in the pan for about a minute longer.
  • While the tofu, onion, and garlic saute, add the broccoli to another pan with a bit of oil so it would pan roast, stirring often.
  • Peel the carrot and shred it.
  • Chop up the red cabbage.
  • Finally, prepare Ben’s Original™ Jasmine Ready Rice™ according to package instructions.
  • Scramble an egg in another pan with some olive oil and add the prepared Ben’s Original™ Jasmine Ready Rice™ to it.
  • After that, add a bit of each of the components: the spiced tofu, the fried rice, the pan-roasted broccoli, the grated carrots, and chopped cabbage to bowls.
