Tofu Hash with Sundried Tomatoes

Ingredients

  • 1 red onion and 1 yellow onion chopped
  • 1 inch piece of ginger chopped
  • 1 inch piece of fresh turmeric chopped
  • 5 cloves garlic chopped
  • 2 celery stalks chopped
  • 1 block extra firm tofu
  • 1 potato cubed
  • 8 pieces of sundried tomato chopped
  • Paprika
  • 3 teaspoons pepper jelly I used Trader Joes
  • Salt and pepper
  • Fresh cilantro to garnish
  • Olive oil

Instructions

  • Place the cubed potato in a microwave safe bowl and microwave for 4-5 minutes
  • Then saute onions, garlic, turmeric and ginger in a pan coated with olive oil for 15-20 minutes till onions caramelize
  • Add in the celery
  • Using paper towels dry the tofu and then cube it, adding the cubed tofu to the onion mix
  • Add in the potatoes
  • Then add in the pepper jelly, paprika, salt and pepper and sundried tomatoes
  • Stir till heated through, garnish with cilantro and face plant into!
