Place the cubed potato in a microwave safe bowl and microwave for 4-5 minutes
Then saute onions, garlic, turmeric and ginger in a pan coated with olive oil for 15-20 minutes till onions caramelize
Add in the celery
Using paper towels dry the tofu and then cube it, adding the cubed tofu to the onion mix
Add in the potatoes
Then add in the pepper jelly, paprika, salt and pepper and sundried tomatoes
Stir till heated through, garnish with cilantro and face plant into!
