Simple, Quick, Easy, and Tasty, Tomato and Chickpea Burgers are perfect for these hectic back-to-school nights!

Ingredients

  • 1 10 oz . can Red Gold Petite Diced Tomatoes & Green Chilies
  • 1 15.5 oz . can of chickpeas
  • 1 clove garlic chopped
  • 1 egg
  • 1 tablespoon Red Gold tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 3-4 tablespoons olive oil

Instructions

  • Add the olive oil to a pan and let it heat up over a medium flame
  • Meanwhile, add the chickpeas and the Red Gold Petite Diced Tomatoes & Green Chilies to a blender and pulse till chickpeas are broken down
  • Scrape this into a bowl and add the chopped garlic, egg, Red Gold tomato paste, paprika, and cumin - and mix well.
  • Form into circles and let cook/fry/brown in the pan with the olive oil for 3- 4 minutes (or till golden) on each side.
  • Enjoy with Spicy Pineapple and Mango Sauce!
