This Vegan Marionberry Ice Cream with Star Anise & graham crackers is so lusciously creamy, so flavorful, so rich, ~ a definite must try before summer ends!

Ingredients

  • 1 16 oz can full fat coconut cream
  • 1 11.25 oz can coconut condensed milk
  • 2 star anise crushed up
  • 1/2 cup marionberry preserves
  • 4-5 vegan graham crackers

Instructions

  • Make sure not to shake the coconut cream. Open the can of coconut cream, and spoon the solid white parts into a bowl.
  • Also into the bowl, add the coconut condensed milk and, using a spoon, gently mix these two well.
  • Grind the star anise (I placed the star anise in a plastic bag, sealed it, and pounded it with a rolling pin until the star anise were well ground up). Then add the ground up star anise to the coconut mix and stir well.
  • Pour the coconut star anise mix into a freezer safe container. Drizzle the marionberry preserves through the container, just don't mix it. Then drop in chunks of graham crackers.
  • Let ice cream freeze at least 2 hours or best if frozen overnight.
