Vegetarian Sheet Pan Dinner Recipe With Orangetti Squash

This Vegetarian Sheet Pan Dinner Recipe With Orangetti Squash is a delightful blend of colorful veggies and beans spiced with cayenne and Ras el Hanout. It is an easy and tasty meal that is ready in less than 40 minutes.

Ingredients

  • 1 yellow onion
  • 1 red onion
  • 1 purple sweet potato
  • 1 can cannellini beans
  • 2 tsp cayenne pepper powder
  • 3 tsp ras el hanout
  • 1/4 cup extra virgin olive oil
  • 1 orangetti spaghetti squash
  • 1 red bell pepper
  • 1/2 lemon
  • 2 tbsp fresh parsley for garnish
  • Salt pepper

Instructions

  • Mix extra virgin olive oil and cayenne and ras el hanout.
  • Cut the orangetti spaghetti squash and scoop out all the seeds.
  • Then, brush oil and spice mixture onto orangetti squash.
  • Line a sheet pan with aluminum foil and place the orangetti squash, cut side down, in the center of it.
  • Peel and chop onions and purple sweet potato.
  • Drain and rinse the beans.
  • Place the onions, purple sweet potato, and beans in a large bowl.
  • Toss them with oil and spice mix
  • Leave some of the oil to toss the bell pepper with.
  • Cut the bell pepper and add it into the bowl with the leftover oil and toss it so it is coated well.
  • Spread the potatoes, onions, beans onto the sheet pan, around the orangetti squash.
  • Place sheet pan in the oven heated to 400 degrees for 20 minutes 
  • At 20 minutes, add the bell pepper to the sheet pan in the oven and bake for 10 more minutes 
  • Remove from oven.
  • Squeeze half a lemon over the baked veggies and beans.
  • Season with salt pepper and sprinkle parsley over the sheet pan and enjoy!
