Deliciously refreshing, this Watermelon Chia Parfait is a light and tasty dessert or a snack.
- 1 cup watermelon juice
- 1/4 cup watermelon chunks
- 1/4 cup chia seeds
- 1/2 teaspoon lime juice
- 1 teaspoon sugar optional - only add if your watermelon isn't super sweet
- 2 teaspoons + 1 or 2 more of whipped dairy free topping

I usually use a fork to scrape a half of a watermelon into "shards" and reserve the juice and used that for this and save the shards
Add the watermelon juice, shards, chia seeds, lime juice, sugar, and 2 tsp whipped dairy free topping into a bowl and mix wel.
Spoon into bowls an chill for 2 hours or more.
