Apple Pecan Breakfast Bread

Spiked with cinnamon, cloves and cardamom, a slice of this plant-based Apple Pecan Breakfast Bread is so inviting on a cold morning.

Ingredients

  • 2 cups rolled oats
  • ½ cup sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp cloves
  • ¼ tsp cardamom
  • 1 cup Silk® Almondmilk
  • ½ cup creamy almond butter
  • 2 tbsp flax meal
  • ¼ cup pecans
  • ½ a medium apple I used a Gala apple

Instructions

  • Preheat oven to 350 degreesAdd oats to a blender and blend until oats are a flour like consistency.
  • Then add in the sugar, baking powder, cinnamon, cloves, cardamom, Silk® Almondmilk, almond butter, flax meal to the blender and blender well and remove blender from base.
  • Then, peel and dice 1-2 an apple and add it to the blender. Also add in the pecans – but do not turn on the blender. Instead, using a spatula/spoon fold the apples and pecans into the batter.
  • Pour batter into a parchment lined loaf pan and bake for 45-50 minutes at 350 degrees.
  • Remove from oven and let cool.If so desired, drizzle with this lemon drizzle.
