This Easy Homemade Mincemeat recipe is a vegetarian version made with a variety of fresh, dried, and candied fruits, coconut oil, brown sugar, brandy, citrus zest and juice, and ground spices.

Ingredients

  • 3/4 cup golden raisins
  • 1 cup dried currants
  • 1/2 cup candied peel
  • 4 pieces of candied ginger
  • 2 tbsp coconut oil
  • 3/4 cup brown sugar
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/4 tsp cloves
  • 1 granny smith apple
  • 1/2 lemon - zest and juice
  • 1/2 lime - zest and juice
  • 1/4 cup brandy

Instructions

  • Peel the apple and dice it up.
  • Also chop up the candied ginger slices.
  • Then, add apple, golden raisins, currants, mixed peel, candied ginger, coconut oil, brown sugar, nutmeg, cinnamon, cardamom, cloves, lemon zest and juice, lime zest and juice, and 2 tbsp of the brandy into a heavy bottom pan.
  • Place pan on stovetop and set heat to low. Cover pan and simmer ingredients for 30 minutes.
  • Then, uncover and let simmer for another 15 minutes, stirring every five minutes or so.
