These Caramel Chocolate Muffins with Coconut Caramel Sauce and an Iced Caramel Mocha helped me get my Monday off to an epic start... and... I am hoping this combo can do the same for ya ~ besides, it isn't as indulgent as it sounds!
Caramel Chocolate Muffins
- 1 cup ground up rolled oats I used my blender
- 2 tsps baking powder
- 1 tsp baking soda
- 2 eggs
- 3 tbspns Simply Pure Caramel Creamer
- 3 tbspns Coconut Caramel Sauce
- 1/4 tsp salt
- 1/2 cup chocolate chips
Iced Caramel Mocha
- 1 cup brewed and cooled coffee
- 3 + 1 tbsnps chocolate syrup
- 4 tbspns Simply Pure Caramel Creamer
- 1 tbsp Coconut Caramel Sauce

Caramel Chocolate Muffins
Preheat oven to 350 degrees.
Add the ground up rolled oats, baking powder, baking soda, and salt to a bowl and mix well. Then add in the eggs, Simply Pure Caramel Creamer, and Coconut Caramel Sauce and mix well. Finally ad in the chocolate chips.
Spoon muffin mixture into lined muffin tray and bake for 15-18 minutes at 350 degrees.
When muffins are done, drizzle some Coconut Caramel Sauce on them and enjoy.
Iced Caramel Mocha
Place the cooled coffee in a large cup and add in the 3 tablespoons of chocolate syrup and 4 tablespoons of Simply Pure Caramel Creamer and mix well.
Add some ice into mix and stir well. Then, strain the ice out and divide the mixture between two smaller cups.
Top with some whipped coconut cream, drizzle on the remaining 1 tablespoon of Coconut Caramel Sauce and Chocolate syrup and enjoy.
